Ingredients
Starter Dough:
- 600 grams High-Protein Flour
- 6 grams Instant Yeast
- 200 grams Ice Water
Dough Ingredients:
- 400 grams High-Protein Flour
- 300 grams Granulated Sugar
- 14 grams Instant Yeast
- 3 grams Bread Improver
- 40 grams Full Cream Powdered Milk
- 180 grams Egg Yolks
- 120 grams Cold UHT Liquid Milk
- 50 grams EKL Lite
- 15 grams Salt
- 300 grams Butter
Instructions
- Mix all the ingredients until 60% smooth (set aside in a separate, tightly covered container) and store for at least 3 hours.
- Mix all the dough ingredients (preferably dry ingredients) until 80% smooth, then add butter/margarine and mix until 100% smooth. Remove from the mixer and let rest for ± 60 minutes.
- Cut and weigh the dough into 60g portions, shape into balls, and rest again for approximately 30 minutes.
- Fill the dough with Innova Chocolate Paste @ 10-15 grams, place into a bluder mold with a bottom diameter of 4.5 x 4.5 cm that has been greased with margarine, proof for approximately 60 minutes, sprinkle with Innova Merak DK chocolate chips to taste.
- Bake in an oven at 180°C for 15 minutes (until fully cooked).
