Ingredients

Dough Ingredients:
  • 170g Rice Flour
  • 40g Cornstarch
  • 75g Granulated Sugar
  • 1/2 tsp Vanilla Powder
  • 3/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 300ml Water
  • 1 Whole Egg

Mix Dry Ingredients:
  • In a bowl, combine the rice flour, cornstarch, granulated sugar, vanilla powder, baking powder, and salt.
  • Stir well.
Add Wet Ingredients:
  • Gradually add the water, stirring constantly to prevent lumps.
  • Add the egg and stir until the mixture is smooth and well combined.
  • The batter should be quite runny, like crepe batter.
Heat the Pan:
  • Use a flat, non-stick pan (such as a crepe pan).
  • Heat over low to medium heat, brushing with a little margarine if necessary.
Pour the Batter:
  • Pour a ladleful of batter into the hot pan.
  • Spread it out with the back of a spoon or move the pan around to spread the batter like a crepe.
Cook and Add Toppings:
  • When the surface begins to dry, sprinkle some granulated sugar, red sprinkles, and chopped peanuts on top.
  • Cook until the edges are dry and crispy, while the center is still soft.
Fold and Lift:
  • Fold the cake into a semicircle (like a typical lekker).
  • Remove and serve.
