Ingredients
Dough Ingredients:
- 170g Rice Flour
- 40g Cornstarch
- 75g Granulated Sugar
- 1/2 tsp Vanilla Powder
- 3/4 tsp Baking Powder
- 1/4 tsp Salt
- 300ml Water
- 1 Whole Egg
Toppings:
- 15g Granulated Sugar
- 30g Innova Choco Rice Red DK
- 30g Innova Diced Peanut
Instructions
Mix Dry Ingredients:
- In a bowl, combine the rice flour, cornstarch, granulated sugar, vanilla powder, baking powder, and salt.
- Stir well.
Add Wet Ingredients:
- Gradually add the water, stirring constantly to prevent lumps.
- Add the egg and stir until the mixture is smooth and well combined.
- The batter should be quite runny, like crepe batter.
Heat the Pan:
- Use a flat, non-stick pan (such as a crepe pan).
- Heat over low to medium heat, brushing with a little margarine if necessary.
Pour the Batter:
- Pour a ladleful of batter into the hot pan.
- Spread it out with the back of a spoon or move the pan around to spread the batter like a crepe.
Cook and Add Toppings:
- When the surface begins to dry, sprinkle some granulated sugar, red sprinkles, and chopped peanuts on top.
- Cook until the edges are dry and crispy, while the center is still soft.
Fold and Lift:
- Fold the cake into a semicircle (like a typical lekker).
- Remove and serve.
