Ingredients
Chocolate Base
- 3 Whole Eggs
- 90 g Granulated Sugar
- 6 g Innova Cake Emulsifier
- 1 g Salt
- 40 g Water
- 80 g Cooking Oil
- 100 g Medium-Protein Flour
- 20 g Cocoa Powder
- 15 g Cornstarch
- 5 g Chocolate Flavoring/Essence
Base Tiramisu Glaze
- 3 Eggs
- 70 g Granulated Sugar
- 6 g Innova Cake Emulsifier
- 1 g Salt
- 40 g Water
- 80 g Innova Dipglaze Tiramisu
- 100 g Medium-Protein Flour
- 20 g Milk Powder
- 15 g Cornstarch
Instructions
1. Initial Preparation
- Heat the steamer until it produces plenty of steam. Grease a 20×10 cm pan with a little oil or margarine, then line the bottom with parchment paper. Prepare all ingredients at room temperature.
2. Making the Chocolate Base
- Beat the eggs, sugar, emulsifier, and salt with a mixer on high speed until thick and fluffy.
- Reduce the speed, then add the sifted mixture of flour, cocoa powder, and cornstarch. Mix gently until combined.
- Add the water and cooking oil, then fold with a spatula until smooth and well mixed.
- Add the chocolate flavoring and mix well.
3. Making the Tiramisu Glaze Base
- Beat the eggs, sugar, emulsifier, and salt until thick and fluffy.
- Add the sifted mixture of flour, milk powder, and cornstarch, and mix gently.
- Add the water and Innova Tiramisu Dip Glaze, then fold until smooth and evenly mixed.
4. Layering & Steaming
- Pour half of the chocolate batter into the pan and spread it evenly. Steam for 15 minutes.
- Pour half of the tiramisu batter on top of the first layer, then steam again for 15 minutes.
5. Finishing
- Remove from the steamer, let it cool slightly, take it out of the pan, remove the parchment paper, and cool it on a wire rack. Cut into pieces as desired.
