Ingredients
Dough Ingredients:
- 125g High Protein Flour
- 125g Medium Protein Flour
- 35g Granulated Sugar
- 4g Yeast
- 0.5g Bread Improver
- 8g Powdered Milk
- 1 Egg Yolk
- 130g Water
- 25g Margarine
- 4g Salt
- 15g Innova EKL
Topping:
- 30gr Innova Dipglaze Chocolate
- 30gr Innova Dipglaze Tiramisu
- 20gr Diced Peanut
Instructions
Mix Dry Ingredients:
- In a large bowl, combine:
- High protein flour
- Medium protein flour
- Granulated sugar
- Instant yeast
- Powdered milk
- Bread improver (if using)
- Mix all dry ingredients well.
Add Wet Ingredients:
- Add the egg yolks, water, and EKL to the flour mixture.
- Knead by hand or a spiral mixer until semi-solid.
Add Margarine and Salt:
- Once the dough begins to form, add the margarine and salt.
- Knead again until the dough is elastic and smooth, but still slightly soft (not like regular bread dough).
- The dough will be a little sticky, which is normal. Do not add any flour.
Dough Fermentation:
- Cover the dough with plastic wrap or a clean cloth.
- Let it rise in a warm place for 45–60 minutes, or until it has doubled in size.
Heat the Oil:
- Heat a lot of oil in a frying pan over medium to low heat (deep frying).
Fried Lukumades:
- Form small balls of dough using your hands or a piping bag, then cut them directly into the oil.
- Fry until golden brown and cooked through, turning occasionally for even browning.
- Use a small, rounded spoon or mini ice cream scoop for even results.
- Remove and drain on kitchen paper towels.
Topping & Serving:
- Once slightly warm, dip or drizzle the lukumades with:
- Chocolate glaze
- Tiramisu glaze
- Sprinkle chopped nuts on top for a crunchy touch.
