Ingredients

Dough Ingredients:
  • 130 g Butter 
  • 80 g Margarine 
  • 50 g Icing Sugar 
  • 1 g Salt 
  • 2 Egg Yolks 
  • 25 g Milk Powder 
  • 20 g Cornstarch 
  • 300 g Low-Protein Flour 
Filling:

180 g Croner Fiber

  • Use 4 g for the body (bottom part) 
  • Use 2 g for the head (top part) 

Instructions

  1.  In a mixing bowl, combine butter, margarine, icing sugar, and salt. Mix until just combined — do not overmix. 
  2. Add the egg yolks and stir until evenly blended. 
  3. Then add milk powder, cornstarch, and flour. Mix until the dough becomes smooth and can be shaped. 
  4. Chill the dough in the refrigerator for about 15 minutes. 
  5. Take 8 g of dough, flatten it, fill with 4 g jam, and roll into a ball — this forms the body. 
  6. Take another 6 g of dough, flatten it, fill with 2 g jam, and roll slightly oval — this forms the head. 
  7. Attach the head to the body and press gently to secure. 
  8. Shape a small piece of dough into a beak, and use sesame seeds or a toothpick mark to make the eyes. 
  9. Bake in a preheated oven at 140–150°C (284–302°F) for about 25 minutes. 
  10. For a glossy golden finish, brush the surface with egg yolk and bake again for an additional 5–10 minutes.
