Ingredients

Ingredients for the Dough:
  • 250 g medium-protein flour
  • 45 g granulated sugar
  • 2 g salt
  • 125 g water
  • 50 g Butter Substitute Royal Krone
Ingredients for the Pastry Layer (Korsvet):
  • 100 g white butter or shortening
  • 50 g medium-protein flour
Isian:
  • 250 g INNOVA Paste Chocolate
  • 25 g Butter Substitute Royal Krone
  • 10 g Chocolate Flavoring
  • 1 g salt
  • 40 g glucose syrup
  • 40 g egg
  • 200 g low-protein flour
  • 40 g milk powder

Instructions

How to Make the Filling:

  1. In a mixer, combine Butter Substitute Royal Krone and INNOVA Paste Chocolate. Mix until smooth and well combined.
  2. Add Chocolate Flavoring, salt, and glucose. Mix again until evenly blended.
  3. Add the egg and mix well.
  4. Add the low-protein flour and milk powder, then mix until a smooth dough forms.
  5. Weigh and divide the filling into 30 g portions. Set aside.


How to Make the Pastry Dough (Skin):

  1. Combine all the dough ingredients except butter. Mix using a mixer until partially smooth, then add butter. Continue mixing until the dough is elastic and well developed. Set aside.
  2. For the pastry layer (korsvet), mix white butter (or shortening) and flour using a mixer until evenly blended. Wrap in plastic and flatten into a square shape. Set aside.
  3. Roll out the main dough into a long rectangle. Place the korsvet in the center, then fold both sides of the dough inward to cover it completely.
  4. Roll the dough into a rectangle again, then fold it using the double fold method. Rest the dough for 5–10 minutes.
  5. Roll out the dough thinly (about 2 mm thick) and cut into 8 × 8 cm squares.
  6. Place one portion of chocolate filling in the center, fold the dough over the filling, and seal tightly. Repeat until all dough and filling are used.
  7. Arrange the pia on a flat baking tray.
  8. Preheat the oven to 230°C (bottom heat only). Bake for about 5 minutes until the bottom turns golden brown, then flip the pia and bake for another 3–5 minutes until both sides are evenly browned.
