Ingredients

Custard:
  • 3 egg yolks
  • 70 g sugar
  • 140 ml milk
  • 170 ml heavy cream
  • 1 tsp vanilla
  • A pinch of salt
Filling:

Instructions

1. Prepare the pastry
  • Cut the puff pastry, roll it, and shape it into tart molds.
  • Press gently to fit the molds.
  • Chill in the fridge for about 15 minutes to prevent shrinking.
2. Make the custard
  • Mix egg yolks and sugar until the sugar dissolves (no need to whip).
  • Add milk and heavy cream, then stir well.
  • Add vanilla and salt
  • Strain the mixture to get a smooth custard.
3. Assemble
  • Sprinkle Innova choco chips at the bottom of the pastry shells.
  • Pour the custard mixture until almost full.
4. Bake
  • Preheat oven to 200–220°C.
  • Bake for 20–25 minutes or until the top has signature burnt spots (caramelized).
