Ingredients
Custard:
- 3 egg yolks
- 70 g sugar
- 140 ml milk
- 170 ml heavy cream
- 1 tsp vanilla
- A pinch of salt
Filling:
- Innova Choco Chips as needed
Pastry:
Instructions
1. Prepare the pastry
- Cut the puff pastry, roll it, and shape it into tart molds.
- Press gently to fit the molds.
- Chill in the fridge for about 15 minutes to prevent shrinking.
2. Make the custard
- Mix egg yolks and sugar until the sugar dissolves (no need to whip).
- Add milk and heavy cream, then stir well.
- Add vanilla and salt
- Strain the mixture to get a smooth custard.
3. Assemble
- Sprinkle Innova choco chips at the bottom of the pastry shells.
- Pour the custard mixture until almost full.
4. Bake
- Preheat oven to 200–220°C.
- Bake for 20–25 minutes or until the top has signature burnt spots (caramelized).
