Ingredients

Bahan Adonan:
  • 1 whole egg 
  • 50 g granulated sugar 
  • 3 g Innova Cake Emulsifier
  • 45 g coconut milk 
  • 65 g medium-protein flour 
  • 13 g cornstarch 
  • Red food coloring, as needed

Instructions

  1. Prepare the Topping. In a small bowl, mix Coconut-O-Fill and water until well combinedSet aside. 
  2. In a mixing bowlbeat egg, sugar, and emulsifier using a high-speed mixer until the mixture becomes thick, pale, and fluffy. 
  3. Add coconut milk gradually and mix gently until evenly combined. 
  4. Sift in flour and cornstarch, then fold the batter slowly with a spatula until smooth and lump-free. 
  5. Add red food coloring as desired, mixing until the color is evenly distributed. 
  6. Lightly grease the putu ayu molds with a thin layer of oil. 
  7. Pour the red batter into each mold until almost full. 
  8. Steam for minutes first to set the batter. 
  9. After 5 minutes, open the steamer and spoon the Coconut-O-Fill mixture on top of each cake. 
  10. Continue steaming for another 7 minutes, or until fully cooked (total steaming time ±12 minutes).
