Ingredients
Bahan Adonan:
- 1 whole egg
- 50 g granulated sugar
- 3 g Innova Cake Emulsifier
- 45 g coconut milk
- 65 g medium-protein flour
- 13 g cornstarch
- Red food coloring, as needed
Topping:
- 100gr Coconut "O" Fill
- 25gr water
Instructions
- Prepare the Topping. In a small bowl, mix Coconut-O-Fill and water until well combined. Set aside.
- In a mixing bowl, beat egg, sugar, and emulsifier using a high-speed mixer until the mixture becomes thick, pale, and fluffy.
- Add coconut milk gradually and mix gently until evenly combined.
- Sift in flour and cornstarch, then fold the batter slowly with a spatula until smooth and lump-free.
- Add red food coloring as desired, mixing until the color is evenly distributed.
- Lightly grease the putu ayu molds with a thin layer of oil.
- Pour the red batter into each mold until almost full.
- Steam for 5 minutes first to set the batter.
- After 5 minutes, open the steamer and spoon the Coconut-O-Fill mixture on top of each cake.
- Continue steaming for another 7 minutes, or until fully cooked (total steaming time ±12 minutes).
