Ingredients
Bread Dough
- 1,000 g high-protein bread flour
- 180 g granulated sugar
- 15 g instant yeast
- 3 g bread improver
- 20 g full cream milk powder
- 2 whole eggs
- 460 g ice water
- 60 g Innova EKL
- 70 g margarine
- 15 g salt
Chocolate Filling
- 300 g Innova Chocolate Premix Powder
- 300 g water
Instructions
Filling:
- Combine all filling ingredients and mix until smooth.
- Spread the filling into a thin rectangular sheet, then set aside.
Prepare the Dough:
- Combine all dry ingredients in a mixing bowl. Add the eggs, ice water, and EKL, then mix until the dough reaches ¾ gluten development.
- Add the margarine and salt, then continue mixing until the dough becomes smooth and fully developed.
- Remove the dough from the mixer, flatten it slightly, wrap it with plastic wrap, and chill in the freezer.
- Place the prepared filling onto the dough. Roll it into a rectangle, then fold it using the double-fold (book fold) method. Let the dough rest.
- Roll the dough out again and cut into 4 × 5 cm squares.
- Arrange the dough pieces on a baking tray and proof in a proofer for 45–60 minutes.
- Bake at 190°C (374°F) for 10–12 minutes, or until golden brown and fully baked.
