Ingredients
Dough Ingredients:
- 250 g high-protein flour
- 250 g medium-protein flour
- 120 g granulated sugar
- 9 g instant yeast
- 2 g bread improver
- 15 g milk powder
- 2 egg yolks
- 1 whole egg
- 125 g water
- 50 g UHT milk
- 70 g margarine
- 7 g salt

Croner Jelly as needed
Instructions
- In a mixing bowl, combine high-protein flour, medium-protein flour, sugar, instant yeast, bread improver, and milk powder. Mix well.
- Add egg yolks, whole egg, water, and UHT milk.
- Mix using a dough hook on medium speed (speed 2–3) for about 5 minutes until the dough starts to come together.
- Add margarine and salt, then continue mixing for another 10–15 minutes until the dough becomes smooth, elastic, and no longer sticky.
- Cover the dough and let it rest in a warm place for about 45 minutes, or until it doubles in size.
- Punch down the dough to release air, then divide it into 15–20 g portions.
- Flatten each piece, add 5–7 g of Croner Jelly, then seal and shape into balls.
- Arrange the dough balls on a greased or parchment-lined baking tray, leaving some space between them.
- Cover with plastic wrap or a clean cloth and let them rest for another 15–20 minutes for a short second proofing.
- Brush the tops with a mixture of egg yolk and milk.
- Bake at 170°C for 6 minutes, or until golden brown.
- Remove from the oven, brush with margarine while hot, and let it cool before packaging.
