Ingredients

Dough Ingredients:
  • 250 g high-protein flour 
  • 250 g medium-protein flour 
  • 120 g granulated sugar 
  • 9 g instant yeast 
  • 2 g bread improver 
  • 15 g milk powder 
  • 2 egg yolks 
  • 1 whole egg 
  • 125 g water 
  • 50 g UHT milk 
  • 70 g margarine 
  • 7 g salt 
Filling:

Croner Jelly as needed

Instructions

  1. In a mixing bowl, combine high-protein flour, medium-protein flour, sugar, instant yeast, bread improver, and milk powder. Mix well. 
  2. Add egg yolks, whole egg, water, and UHT milk. 
  3. Mix using a dough hook on medium speed (speed 2–3) for about 5 minutes until the dough starts to come together. 
  4. Add margarine and salt, then continue mixing for another 10–15 minutes until the dough becomes smooth, elastic, and no longer sticky. 
  5. Cover the dough and let it rest in a warm place for about 45 minutes, or until it doubles in size. 
  6. Punch down the dough to release air, then divide it into 15–20 g portions. 
  7. Flatten each piece, add 5–7 g of Croner Jelly, then seal and shape into balls. 
  8. Arrange the dough balls on a greased or parchment-lined baking tray, leaving some space between them. 
  9. Cover with plastic wrap or a clean cloth and let them rest for another 15–20 minutes for a short second proofing. 
  10. Brush the tops with a mixture of egg yolk and milk. 
  11. Bake at 170°C for 6 minutes, or until golden brown. 
  12. Remove from the oven, brush with margarine while hot, and let it cool before packaging.
