What Is Bread Improver? Functions, How It Works, and Dosage Guide for Bakeries

What Is Bread Improver? Functions, How It Works, and Dosage Guide for Bakeries
Date 23 Oct
Read Time 8 min

Bread improver is a blend of food additives added to bread dough to improve texture, volume, and shelf life. Its main components include enzymes (amylase, protease), emulsifiers, and oxidizing agents that work together to strengthen the gluten network, optimize fermentation, and produce bread that is softer, more consistent, and longer-lasting.

If your bread already uses good-quality flour, active yeast, and the correct techniques—but the results are still inconsistent, lack volume, or become hard quickly—the answer may be bread improver.

Bread improver is one of the ingredients most often overlooked by beginners but widely relied upon by professional bakeries. This article provides a complete explanation of what bread improver is, its functions, how it works in dough, and dosage guidelines for different types of bread.

What Is Bread Improver?

Bread improver (also known as bread conditioner or dough conditioner) is a blend of food additives designed to improve dough quality and the final bread product. It is not a replacement for yeast or flour, but a supporting ingredient that optimizes the entire process, from gluten formation to baking.

In the bakery industry, bread improver has become a standard part of bread formulations—from small-scale SME bakeries to bread factories producing thousands of pieces per day. The reason is simple: consistent quality from batch to batch is essential in the bread business.

Bread improver is different from bread mix or bread premix. Bread improver is an additive mixed into an existing recipe, while bread mix is a ready-to-use mixture containing all the ingredients.

What Does Bread Improver Contain?

Bread improver formulations vary between brands, but they generally contain three main groups of ingredients:

1. Enzymes

Enzymes are the most important components in modern bread improvers. The most commonly used enzymes are:

  • Amylase: breaks down starch into sugars that can be used by yeast, optimizing fermentation and extending bread shelf life.
  • Protease: softens the gluten network, making the dough more elastic and easier to shape.
  • Lipase and xylanase: improve bread volume and crumb texture.

2. Emulsifiers

Emulsifiers in bread improver help keep oil and water evenly mixed in the dough. Their benefits include:

  • Softening the crumb texture (the inside of the bread).
  • Increasing the dough's tolerance to process variations.
  • Slowing down staling, helping bread stay soft longer.

3. Oxidizing Agents

Oxidizing agents such as ascorbic acid (vitamin C) strengthen the gluten network, allowing the dough to retain CO₂ gas more effectively during fermentation. The result is bread with better expansion and greater volume.

How Does Bread Improver Work in Dough?

Bread improver works during several stages of the bread-making process:

Mixing Stage

When mixed into the dough, the oxidizing agents in bread improver begin strengthening gluten bonds. The dough becomes more elastic, easier to knead, and more tolerant of variations in mixing time.

Fermentation (Proofing) Stage

Amylase enzymes break down some of the starch into additional sugars that support yeast activity. The result is more optimal fermentation, even when environmental conditions such as temperature and humidity are less than ideal.

Baking Stage

During baking, the gluten network strengthened by bread improver is better able to retain gas expansion, allowing the bread to rise more fully. Enzymes that are active at lower temperatures (<60°C) help form the structure before eventually becoming inactive due to heat.

After Baking (Shelf Life)

This is one of the most noticeable benefits of bread improver for businesses: emulsifiers and certain enzymes slow down starch retrogradation—the phenomenon that causes bread to become hard and stale. Bread made with bread improver can remain soft for 2–3 days longer compared with bread made without bread improver.

What Is the Difference Between Bread Improver and Yeast?

This is a very common question. The answer: they work together rather than replacing one another.

  • Yeast is a living organism that produces CO₂ gas to make bread rise. Without yeast, bread will not rise.
  • Bread improver is not a living organism and does not produce gas. Its function is to optimize dough conditions so that yeast can work more efficiently and produce better results.

An easy analogy: yeast is the engine, while bread improver is the oil that helps the engine run better and last longer.

Benefits of Bread Improver for Bakery Businesses

From a business perspective, bread improver provides tangible and measurable added value:

  • Consistency between batches – bread results remain consistent even when operators change or weather conditions vary.
  • Higher process tolerance – the dough does not immediately fail because of minor timing or temperature errors.
  • Longer shelf life – bread stays soft for 1–3 days longer, reducing product returns or leftovers.
  • Better volume – bread looks larger and fuller, increasing its perceived selling value.
  • More efficient fermentation time – some bread improver formulations allow for shorter proofing times.

For bread businesses selling to grocery stores, minimarkets, or catering services, the longer shelf life provided by bread improver can directly reduce product returns and increase net revenue.

Bread Improver Dosage Guide

Bread improver dosage is usually expressed as a percentage of the flour weight (baker's percentage). Here is a general guide:

Type of Bread

Recommended Dosage

Expected Effect

White bread & pull-apart bread

0.2–0.5% of flour weight

Soft, voluminous, longer-lasting

Sweet bread & filled bread

0.3–0.5%

Elastic, easy to shape

Whole wheat bread

0.5–0.8%

Compensates for weaker gluten

Frozen bread

0.5–1.0%

Maintains good quality after thawing

Donuts (before frying)

0.2–0.4%

Optimal volume, less excessive oil absorption

Important note: Always follow the dosage recommendation on the packaging of the product you use, as formulations vary between brands. Excessive use can result in dough that is too strong, difficult to shape, or bread with a less natural texture.

How to Use Bread Improver Correctly

  • Add bread improver together with the flour before adding liquids to ensure even distribution.
  • Do not mix it directly with dry yeast. Yeast and some bread improver components may interfere with each other if they remain in contact for too long before water is added.
  • Weigh it precisely. A 0.1% difference in the formulation can affect the final result.
  • Store it in a cool, dry place. Humidity can reduce enzyme effectiveness.
  • Follow the ingredient mixing order recommended in the recipe.

When Does a Bakery Need to Use Bread Improver?

Not every type of bread requires bread improver. Here is a simple guide:

Use Bread Improver if:

  • You produce bread in large volumes and need consistency between batches.
  • The bread needs to last 3+ days before consumption (distribution to stores, shops, or catering).
  • Production conditions are not ideal (inconsistent temperatures or varying flour quality).
  • You want to shorten proofing time for production efficiency.
  • Your target products are soft sweet bread, white bread, or donuts that require optimal volume.

You Can Go Without Bread Improver if:

  • You make artisan bread or sourdough that specifically benefits from natural fermentation.
  • The bread is consumed on the same day and batch-to-batch consistency is not a major priority.
  • You make bread on a home scale where each batch is consumed immediately.

FAQ: Frequently Asked Questions About Bread Improver

Is bread improver safe to use?

Yes. Bread improvers registered with BPOM and certified halal use ingredients that are safe for consumption. Enzymes in bread improver become inactive during baking, so there is no active residue in the final product.

Is bread improver the same as a bread preservative?

No. Bread improver works by modifying the dough structure naturally rather than adding chemical preservatives. Bread made with bread improver lasts longer because its gluten structure is more stable, not because preservatives have been added.

Can it be mixed with emulsifiers such as SP or TBM?

Bread improver for bread (such as Innova Bread Improver) and emulsifiers for cakes (such as SP/TBM) are different products for different applications. Bread improver is for bread and donuts, while emulsifiers are for sponge cakes and cakes that require rapid aeration during whipping.

What are the signs of too little or too much bread improver?

Too little: less-than-optimal volume, dense texture, and bread that becomes hard quickly.

Too much: dough that is too strong or stiff, difficult to shape, and crumb texture that is less than ideal.

The solution is to follow the recommended dosage and conduct a small-batch test before full-scale production.

What is the difference between bread improver and bread mix/premix?

Bread improver is an additive added to your bread recipe—flour, yeast, and other ingredients are still required. Bread mix/premix is a complete mixture that already contains all the ingredients and only needs water and yeast to be added.
